A Break in our Regularly Scheduled Programming George and I are in my home state of South Dakota, computer-free, for a week visiting family and friends over the July Fourth holiday. I might be taking a writing break, but you’re still getting this awesome recipe I got from Curves Gym! Lime-Cilantro Chicken Salad with Grapefruit and Spinach -3 boneless, skinless chicken breasts, cooked, chilled and cut into small chunks or strips -1 lime, cut in half -1/2 tsp black pepper, sprinkle salt -2 C spinach -1 grapefruit, sectioned -1 C strawberries, sliced -4 scallions, sliced -1/4 C chopped fresh cilantro -2 TBSP olive oil Place chicken in large bowl, squeeze 1/2 lime on top, sprinkle with pepper and salt. Add spinach, grapefruit, strawberries, scallions and cilantro. Squeeze remaining lime half on top and drizzle with oil. Toss and serve. Happy Independence Day!
